Sauerkraut Cake Contest : Winning Recipes
At Bicentennial July 5, 2008
1st Place winner Marian Stone, Sour Cream Sauerkraut Cake
Cake Ingredients
2 cups sugar
¼ cup butter
1 cup sour cream
1 teaspoon vanilla
3 eggs
Mix above until creamy.
2 cups flour
1 ¼ teaspoon baking soda
1 teaspoon baking powder
½ teaspoon salt
1 ½ cup cocoa
Mix, then add to creamy mixture. Mix until wet.
Add 2 cup sauerkraut. Mix well. Bake @ 350 degrees for 35-40 Minutes.
Makes 2 12” X 9 ½ Cakes
Coconut topping
1 cup sugar
1 cup milk
1 bag large marshmallows
1 14 oz. bag coconut
Heat sugar and milk until sugar is dissolved. Add marshmallows. Add coconut. Set aside.
Chocolate topping
1 ½ cup sugar
½ cup milk
1 stick butter
12 oz. bag of semi-sweet chocolate
Heat until melted then add Chocolate chips. Add coconut onto cake, then the chocolate.
2nd Place winner, Esther Pierce, German Chocolate Sauerkraut Cake
Cake ingredients
2/3 cup butter
1 1/3 cups white sugar
Cream above thoroughly.
Beat in 3 eggs, one at a time
And 1 teaspoon vanilla extract
Mix together:
½ cup unsweetened cocoa powder
2 ¼ cups all purpose flour
1 teaspoon baking powder
¾ teaspoon baking soda
¼ teaspoon salt
Add alternately with 1 ¼ cups water to egg mixture.
Stir in 2/3 cup drained & chopped Sauerkraut.
Grease and flour (2) 8” or 9” pans. Pour batter into prepared pans. Bake at 350 degrees F. for 30 minutes.
Frosting
4 tablespoons butter
4 sq. chocolate (4oz)
Melt together.
Blend in 2 2/3 cup 10x sugar
1/3 teaspoon salt
5 tablespoons milk
1 ¼ teaspoon vanilla
Beat until it becomes smooth and glossy and thick enough to spread. Cover with ½ cup chopped walnuts.
3rd Place winner, Betty Ann Pitman, Preble Sauerkraut Cake
Cake ingredients
½ cup butter
1 ½ cups white sugar
Cream above until light.
Add 3 eggs, one at a time
1 teaspoon vanilla extract
Sift together:
2 cups all- purpose flour
1 teaspoon baking powder
1 teaspoon baking soda
¼ teaspoon salt
½ cups unsweetened cocoa powder
Add to creamed mixture alternately with 1 cup water beating after each addition. Stir in 8 oz. sauerkraut drained and chopped.
Grease & flour 9x13 baking pan. Bake at 350 degrees F for 35 minutes.
Frosting
1 cup semisweet chocolate chips
4 tablespoons butter
Melt above.
Blend in:
½ cup sour cream
1 teaspoon vanilla extract
Let above stand & Mix:
2 ¾ cups sifted confectioners’ sugar
¼ teaspoon salt
Gradually mix the two together until frosting is spreading consistency.
